Recipe for Granny Carvell's
Cranberry Ice

from the kitchen of 
Eudora Ellen Bigger Carvell (1895-1957)
Newport, Arkansas

1 lb. pkg. of fresh cranberries

2 cups water
 

Cook until berries pop. 
Then run through sieve or strainer to remove pulp.

1 envelope (1 tbsp.) Knox gelatine dissolved in 1/2 cup cold water.
Set aside until needed.

3 cups sugar and 1 cup water, boiled together until sugar dissolves.
While still hot, add the gelatine mixture.

Add the juice of 5 oranges (2 cups) and the juice of 2 lemons (or 5 tbsp. lemon juice).

Mix all ingredients together and put into the freezer.
 

Remove from the freezer and beat several times during freezing process.
Freeze until mixture is mushy, then beat with mixer. 
This makes it creamy and is a critical step in making this wonderful dessert.
