Royal Scottish Shortbread
This is another Internet recipe that is so simple it can be done by your kids. This one was downloaded in 1993 but originated in a Family Circle Christmas magazine from 1966 (or so the story goes). Regardless of where it came from, it's a pretty good imitation of the expensive shortbread you can buy in Britain or around Christmas in the U.S. (By the way, this is probably the most unhealthy recipe on our web site, so don't say you weren't warned!)
10 min. preparation, 30 min. chilling, 50 min. baking
1 cup REAL butter (substitution is disastrous)
1/2 cup powdered sugar
2 cups white flour
1. Cream butter and powdered sugar by hand and then knead in the flour.
2. Pat out 3/4 inches thick on cookie sheet, prick surface with fork (designs are mandatory), and chill for 30 min.
3. Bake for 5 min. at 375 degrees, then 45 min. at 300 degrees until golden but not brown
4. Cut into squares while hot.
