Lynn's Balsamic Chicken
Lynn just made this one up one day when time was short and the kids were hungry. It's lasted ever since.
Lynn Carlton
10 min. preparation, 20 min. cooking, for 4
2 lb chicken breasts
4 tbsp butter (1/2 stick)
2 cloves garlic
1 green bell pepper
2 onions
1 small zuchinni
2 tbsp balsamic vinegar
1. peel garlic, cut into 1/4" squares, crush with side of knife, and chop finely
2. heat skillet and melt 2 tbsp butter with garlic
3. chop peppers, onions, and zuchinni
4. fry peppers and onions 3-4 min, add zuchinni for 1-2 min, then set aside in serving dish
5. melt 2 tbsp butter in skillet and fry chicken until done (10-15 min)
6. add balsamic vinegar, turn chicken and return vegetables for 1-2 min.
